Inside the bottle
Nestled in the hills on the east of the medieval town of Soave, part of the Veneto Region, one finds the finest vineyards producing some of Italy’s most sensational white wines. Grown in the Soave’s Classico Zone, where wine has been produced for centuries; Carbonare is made by 100% Garganega grapes.
Found on the hilly slopes, the vines of Carbonare are rooted in volcanic, basalt soil, which is rich in minerals, cultivating vibrant and elegant flavours. Monte Carbonare is one of 33 crus in Soave. Located along the hillside with exposure to the East; having a vivid morning sun and gentler afternoon, together with fresh air from surrounding valleys and mountains; temperatures are cool during the growing season, thus resulting in fresher fruit with superior acidity.
Meticulously hand-picked grapes are destalked and crushed, followed by maceration on the skins for 4 hours; allowing some juice to be in contact with the skins, thus giving enhanced body and texture to the wine. The grapes are then pressed and alcoholic fermentation takes place in stainless steel vats. Later, the wine is left to mature in the vats for a further 12 months. Once the wine is bottled, it is kept in the winery’s cellar to bottle age for a further 6 months.
Flavours and aromas
Carbonare embodies blissful aromas of citrus, matched with the right touch of acidity and mineral freshness. The colouring mimics yellow flowers with medium intensity, harmonising with the scent of lemon, stone fruit, fields of flowers and herbs. The wine is crisp and refreshing, mixed with a touch of salinity, a pleasant texture and good length.
Food Pairing
In keeping with the freshness of one’s palate from the Carbonare Soave Classico, the perfectly paired dishes are ones of a cool nature. Thus, fish and shellfish are the right choice.
Ranging from raw gillardeau oysters to dry aged fish charcuterie to grilled or fried selections, the softer delicate flavour of fish in general always answers to the minerality of the Soave Classico.
